OKRA

Sautéed Okra & Vegetables

2 tbsp olive oil    
½ onion, chopped 
2 garlic cloves, minced
½ bell pepper, chopped
2 tomatoes, diced
1 ½ cups okra, chopped
¼ tsp cayenne pepper
2 tbsp fresh parsley

DIRECTIONS
1  Heat olive oil in skillet over medium heat.
2  Add bell pepper. Cook until tender. Add tomatoes.
3  Season with cayenne & parsley. Simmer for 5 min.
4  Add okra to skillet. Cover and cook for 15 min.
5  Season with salt and pepper to taste. Serve over rice.
