EGGPLANT

Eggplant & Penne Pasta

½ box penne pasta    
¼ cup olive oil        
1 medium eggplant    
½ lb cherry tomatoes
2 cloves garlic, minced
¼ tsp crushed red pepper
½ lb mozzarella
Salt & pepper to taste

DIRECTIONS
1  Cook pasta according to directions. Put aside.
2  Meanwhile, heat oil in skillet over medium-high heat.
3  Add eggplant. Cook until golden brown, 8–10 min.
4  Add tomatoes, garlic, red pepper & salt. 
5  Cook 2–3 min over medium heat.
6  Add tomato mixture & mozzarella to pasta.
